Regular tap, and even bottled, water often contains the wrong kinds and / or amounts of minerals needed to extract all of the good flavors in your coffee to create a tasty and balanced result.
In addition, water that contains high amounts of calcium carbonate is the reason for limescale to build up in your favorite brewing equipment (pour over kettle, automatic dripper, etc.).
